Specifications German Stainless Steel Unlike other brands that claim their steel is German, or even high-carbon, Jero steel is true German made high-carbon stainless steel. This means you get long edge life, strength to handle any job, but still maintaining the popular sharpening properties of carbon steel. High Tech Handle Jero TR Series handles are injection molded onto the blade and tang of the knife, to form a strong bond and seamless transition from blade and handle - reducing areas where bacteria can hide and grow. The Jero dual injection process applies a very strong and dense first layer of polymer. Next a softer polymer layer is injection molded, forming a one piece design that will not separate like other brands. With time the handle's traction improves to provide a comfortable and secure grip. Handle Design The handle design took years to develop as the shape of the handle needed to be both comfortable, but provide control from various hand positions. The knife line was tested for a year by professionals in the meat processing industry to ensure the best possible handle would be constructed.
